Beer Braised Chicken Tacos

You don’t need to go to a 5-star authentic Mexican restaurant or a high-end food truck to get those delicious tacos you’ve been craving. With a simple recipe, you can make great tacos at home.

Most people (myself included) usually opt for the simple ground beef and taco seasoning tacos. They’re delicious enough, but a more flavorful taco is to be desired.

The beer braised chicken in this recipe tastes as if it had been cooking for hours. That’s just how rich the flavor is. The hoppy beer infuses the chicken with deeper flavors, and letting the chicken simmer while the excess beer evaporates is what really gives these tacos that sweet but savory flavor.

Once the shredded chicken is cooked to perfection, all you have to do is get your taco toppings together. There you have it, a perfect taco night, fit for bar friends and family alike.

Beer Braised Chicken Taco Recipe

This recipe may actually be killing 4 birds with one stone. You can use the chicken in this recipe not only for tacos but for burritos, quesadillas, and taco bowls, too. Or, just serve it up with some rice and beans and call it a day.

Whatever you do with it, you can rest assured that it’ll taste great.

Ingredients:
  • ½ pound of chicken breast and/or thigh
  • 1 onion, finely chopped
  • 1 tablespoon olive oil
  • 1 chipotle chile, finely chopped
  • ¼ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 10 ounces of green or red enchilada sauce
  • ¼ teaspoon salt
  • 1 can of FRIO beer
For toppings:
  • Sour cream
  • Shredded cheddar cheese
  • Thin slices of avocado
  • Salsa
  • Cubed tomatoes
  • Shredded cabbage
  • Sliced radish
  • Corn
  • Jalapeno peppers
TIME:
50 minutes if shredding chicken beforehand. 30 minutes if chicken is already shredded.
This recipe serves 4 people.

Step 1
- Cook and shred the chicken if it is not already shredded. The easiest way to do this is to boil it in water, chicken stock, or beer(!) for about 20 minutes. Once the inside is only slightly pink, take a fork and shred the meat off of the bones. It should be very tender and loose.

Step 2
- In a pan on the stove over medium-high heat, cook the onion and chicken. Once the onion is starting to become clear and brown, add in all the other ingredients. Cover the pan and let this simmer for about 20 minutes, or until the remaining beer has reduced. Stir every few minutes.

Step 3
- Now, taste the chicken and add in any seasonings you think it may need. Once it tastes perfect, spoon the chicken into your taco shells and top with whatever toppings you want.

As you can see, this three-step recipe can be done in under an hour. With some peppers and sour cream and a bit of avocado, a bite of these beer braised chicken tacos is everything you could ever wish for (from a taco, that is).
